Pumpkin Roulade with mascarpone cheese and whipped cream

Super easy!  Dip a marshmallow in melted chocolate and lay on top of a Keebler striped cookie that is upside down!  Add more chocolate around cookie edges if needed.  Use gel frosting to pipe on the buckles.
