SALMON, EGGS & ONION




2 salmon filets (salt, peppered and broiled 13 mins or until cooked through, then chop)
1 onion, diced
3 Tablespoons butter
6 eggs, whisked
s&p to taste

Melt butter in a skillet and add onions and salmon.  Sautee until onions are translucent.  Push salmon and onions to the edges of skillet and add eggs in the center. Scramble and then toss with the onins and salmon to combine.  Add salt and pepper to taste.  Top with scallions.

SALMON WITH MAC NUT OIL!

SEASON 2 SLICES SALMON (THIS IS WILD COPPER RIVER SALMON) WITH SALT, PEPPER AND A DRIZZLE OF MAC NUT OIL. SPRINKLE ON SOME FRESH, CHOPPED DILL.  BROIL SALMON ON A NONSTICK FOIL LINED SHEET FOR ABOUT 12-14 MINS.

COHO SALMON TOPPED WITH DILL, GUACAMOLE & BACON




THIS DINNER WAS AMAZING!!!!!! A TOP 10 IN MY HOUSE!
SERVES 2-DOUBLE FOR MORE PEOPLE
1.  COOK 4 SLICES OF BACON ON A NONSTICK FOIL SHEET IN A 400 DEGREE OVEN FOR ABOUT 20 MINS.  DRAIN ON PAPER TOWELS AND SET ASIDE.

2.  SCOOP 2 AVOCADOS INTO A BOWL.  ADD JUICE OF 1 LEMON, 1 MINCED GARLIC CLOVE, SALT & PEPPER TO TASTE, 1 CHOPPED SCALLION AND MASH ALL TOGETHER.

3.  SEASON 2 SLICES SALMON WITH SALT, PEPPER, FRESH DILL AND 2 SMALL PATS OF BUTTER.  BROIL SALMON ON A NONSTICK FOIL LINED SHEET FOR ABOUT 12-14 MINS.

TO SERVE, PLACE A DOLLOP OF THE GUACAMOLE ON THE SALMON AND LAY BACON ON TOP!  SERVE EXTRA GUACAMOLE ON THE SIDE!

COPYCAT STEAKHOUSE CAST IRON CORN

HERE'S THE CORN HEADING INTO THE CAST IRON SKILLET!
 

Heat skillet:
Add 2T. butter and melt.
Add 1 bag frozen corn, salt and pepper. Cook until browned!  The best!


NOW, IT'S READY......
 I BROILED SOME SALMON TOO!  SALT, PEPPER, SMALL PAT OR 2 OF BUTTER, DILL OR ROSEMARY (WHICHEVER U HAVE ON HAND) AND BROIL12-14 MINS. YUM!

SALMON STUFFED WITH SHRIMP, CAPERS, ONIONS & OLIVES





2 PIECES salmon
10 large shrimp, deveined and peeled
1 small white onion, chopped
2 tablespoons capers
2 tablespoons fresh dill
1/4 cup green olives, chopped
1 garlic clove, crushed
a sprinkle of turmeric
butter, small pieces
Sea salt and black pepper

Season salmon both sides with sea salt, black pepper and 2 pats butter

In a large skillet on medium to high heat add a little olive oil. Add onions & cook about 4 minutes. Add olives, capers, and dill. Toss for three minutes. Add shrimp for just a minute or 2 and season with Turmeric, s & p.  Remove from heat to cool.

Preheat oven to 450 F

Place salmon skin side down on a slightly oiled baking sheet. Cut a pocket the length of the salmon and stuff with the veggies and shrimp. Bake for 10.  Turn on the broiler and broil for 5 minutes.
Garnish with fresh dill and drizzle  olive oil on top.

BACON & GUACAMOLE SALMON


THIS DINNER WAS AMAZING!!!!!! A TOP 10 IN MY HOUSE!
SERVES 2-DOUBLE FOR MORE PEOPLE

SALMON WITH FRESH DILL


HOW AWESOME DOES THIS SALMON LOOK?!  GOTTA LOVE COSTCO! ESPECIALLY FOR WORKING MOMS! SO QUICK AND EASY TO PREPARE!  I TOP IT WITH A FEW PATS OF BUTTER, SALT, PEPPER AND FRESH DILL. I BROIL IT FOR 12-15 MINUTES! DONE!

MOST DELICIOUS SALMON THAT PREPS IN 2 MINUTES FLAT!



1. LAY SALMON PIECES ON A NONSTICK FOIL LINED COOKIE SHEET.
2. TOP EACH PIECE WITH 2 VERY TINY PATS OF BUTTER. (ABOUT 1 TSP EACH).
3. SEASON GENEROUSLY WITH SALT AND PEPPER.
4. CUT SOME FRESH DILL ONTO EACH PIECE.
5. BROIL 12-15 MINUTES.
6. SQUEEZE FRESH LEMON ONTO EACH PIECE.
SERVE WITH BROWN RICE & STEAMED BROCCOLI/CAULIFLOWER!

ASIAN GLAZED SALMON

THIS SALMON RECIPE COMES FROM MY WONDERFUL FRIEND LIZ AT THAT SKINNY CHICK CAN BAKE! IT WAS DEEEEE-LISH! THANKS LIZ! :-)

Glazed Salmon
...adapted from Everyday Food

4 salmon fillets (6-8 ounces each)
1/4 cup brown sugar
1/4 cup olive oil
3 tablespoons soy sauce (I USED GLUTEN FREE)
2 tablespoons fresh lemon juice
2 tablespoons dry white wine
Lemon wedges


Preheat oven to 400º.
Combine brown sugar, olive oil, soy, lemon juice and white wine. Stir to dissolve sugar.
Place salmon fillets in a baking dish. Pour glaze over salmon and turn to coat. Let marinate 10-20 minutes, turning at least once.
Bake to your desired doneness (ours took about 15 minutes), basting every few minutes with glaze. Serve with lemon wedges and a drizzle of glaze if desired.
I chopped some scallions for the top and served it over quinoa with steamed broccoli (buttered and salted).
