ASIAN GLAZED SALMON

THIS SALMON RECIPE COMES FROM MY WONDERFUL FRIEND LIZ AT THAT SKINNY CHICK CAN BAKE! IT WAS DEEEEE-LISH! THANKS LIZ! :-)

Glazed Salmon
...adapted from Everyday Food

4 salmon fillets (6-8 ounces each)
1/4 cup brown sugar
1/4 cup olive oil
3 tablespoons soy sauce (I USED GLUTEN FREE)
2 tablespoons fresh lemon juice
2 tablespoons dry white wine
Lemon wedges


Preheat oven to 400ยบ.
Combine brown sugar, olive oil, soy, lemon juice and white wine. Stir to dissolve sugar.
Place salmon fillets in a baking dish. Pour glaze over salmon and turn to coat. Let marinate 10-20 minutes, turning at least once.
Bake to your desired doneness (ours took about 15 minutes), basting every few minutes with glaze. Serve with lemon wedges and a drizzle of glaze if desired.
I chopped some scallions for the top and served it over quinoa with steamed broccoli (buttered and salted).
