ROLO CHEESECAKE BARS....INSANELY DELISH!!!!!!!!!!!

 


HERE ARE A BUNCH OF BARS ON MY TRAY....READY TO TRAVEL! HERE IS THE CHEESECAKE BATTER MEETING THE ROLOS! HOT OUT OF THE OVEN -READY TO COOL! POURING ON THE CHOCOLATE GLAZE!!!!!!



CRUST:
3 cups of graham cracker crumbs
1 cup sugar
2 STICKS MELTED BUTTER (16 TABLESPOONS)


STIR ALL TOGETHER AND PRESS INTO A 9X13 PAN LINED WITH NONSTICK FOIL.
BAKE AT 350 FOR 7-10 MINUTES AND COOL.


FILLING:
BEAT: 2 8-OUNCE PACKAGES OF CREAM CHEESE
2 EGGS
1C. SUGAR
1/4C. FLOUR
ONCE SMOOTH, ADD ONE PACKAGE OF MINI ROLOS (THE UNWRAPPED ONES)

POUR ONTO THE COOL CRUST AND BAKE AT 350 FOR 30-35 MINUTES.

LET COOL AND ADD GLAZE.

GLAZE:
MELT IN THE MICROWAVE:
1 STICK BUTTER & 6 OUNCES CHOCOLATE CHIPS.
STIR SMOOTH AND ADD 4 TSP. LIGHT CORN SYRUP.
POUR SMOOTHLY ON BARS AND CHILL OVERNIGHT.
CUT WITH A BIG KNIFE! I ADDED A CHOCOLATE DRIZZLE AND A HALF A ROLO ON TOP!

Just came across this recipe. OH MY GOODNESS! I need to try this! Before I do I have a question. Where do you find mini rolos? How big is the bag? We have tubes of rolos but I think there are 7 in a tube - looks like you use more! Also the choclate drizzle you top the cheesecake with. Is this a bottle of drizzle or do you make it? Thanks

I made these recently and they were absolutely amazing! Everyone I gave some to went gaga! I've honestly never made such a delicious dessert. So delicious in fact I am making 2 more batches as we speak for Easter. Thank you so much for sharing this recipe it really made me a hit lol

VAN PINX-Let them sit out for maybe 20 mins and then cut them all up! Chill again and before serving let them sit out again to soften the rolos. Glad you enjoyed them!!!

Can you please tell us what kind of chocolate drizzle you used? Recipe for it. Also what size pan?

sure! i always drizzle with chocolate chips melted in a piping bag and the pan says 9x13. Hope u enjoy!

Semi sweet or milk chocolate?
Also - for the top did you use half of a regular sized rolo or mini rolo?

Just made these last night. For the crust I used a mix of chocolate and regular graham cracker crumbs- turned out very well.

They taste SO good.

I am trying these now but it all fell apart at the glaze. Don't know what I did wrong but the butter and the chocolate chips went all funny and grainy looking and started to harden. They didn't go all runny and smooth even though I added the Light Corn syrup. What am I doing wrong I wasted an entire bag and got terrible results. I'm reluctant to buy another bag only to have them go funny again on me again. Ive used chocolate chips for other recipes and put them in the oven for a few minutes and they melted smoothly, should I skip the butter?

Heidi-sounds like the chips scorched from overheating in the microwave possibly? Heat at just 30 second intervals and stir.
