CRAZY COOKING CHALLENGE


WOO HOO-THIS MONTH I JOINED THE CRAZY COOKING CHALLENGE IN QUEST OF THE BEST SPAGHETTI RECIPE! I FOUND THE RECIPE BELOW AT SMITTEN KITCHEN AND CHANGED IT JUST A BIT. THIS SAUCE SMELLED WONDERFUL WHILE COOKING!!! IT HAS VERY FEW INGREDIENTS....CANNED TOMATOES, BUTTER AND ONION....HOW BAD COULD THAT POSSIBLY BE!!!!!!! I SERVED IT OVER HOMEMADE GLUTEN FREE SPAGHETTI!




RECIPE ADAPTED FROM SMITTEN KITCHEN...WRITTEN AS I MADE IT (DOUBLING MOST OF IT)
2 28-OUNCE CANS WHOLE TOMATOES
1 STICK BUTTER
1 LARGE ONION PEELED AND HALVED

PLACE ALL IN A LARGE POT AND BRING UP TO A SIMMER. COOK COVERED 45-60 MINS BEING SURE TO BREAK UP THE LARGE TOMATOES. I ADDED SALT, TOO!!!! DISCARD ONION WHEN DONE COOKING.

What an interesting recipe. Not sure I could ever try it without running it thru the food processor first (Husband hates chunky tomatoes) but looks good.

This tomato butter sauce is my family's absolutely favorite. We like it so much that it was hard to participate this month! Hope you loved it as much as we do!
