PEANUT BUTTER DREAM BARS


WELL, IT'S WEEK 4 OF 3 BUBBLY BAKERS AND IT WAS MY TURN TO PICK! IT SHOULD BE NO SURPRISE TO YOU THAT I CHOSE A RECIPE INCLUDING PEANUT BUTTER, CHOCOLATE AND OREOS! SORT OF LIKE HOMEMADE PEANUT BUTTER CUPS MEET OREOS! OREOS NOT YOUR THING? THAT'S OKAY....THE ORIGINAL RECIPE CALLS FOR BUTTER COOKIES OR CHOCOLATE CHIP SO YOU CAN BE CREATIVE! THESE BARS ARE EXACTLY AS DELICIOUS AS THEY SOUND. ALSO VERY SIMPLE! HOPE YOU TRY THEM SOON. PEANUT BUTTER DREAM BARS:

Crust-We found it necessary to double the ingredients below!

8 Butter OR chocolate chip cookies (I used Oreos-IF U DO, DECREASE  BUTTER BY A SMIDGE)

1/4 c  Salted butter; melted 



Chocolate layers

2 1/2 c  Milk choc chips (15 oz)



Peanut butter filling:

1 1/2 c  Creamy peanut butter

1/2 c  Salted butter; softened

3 c  Confectioners' sugar

2 tsp Pure vanilla extract



*Crush cookies until finely ground in food 
processor.  
Add butter & mix. Press crumb mixture into 
bottom 
of 8x8 baking pan & bake 10 mins. at 325 F. 
Cool to room 
temperature. Melt chocolate. 
Pour half into pan & smooth evenly over c
rust. 
Place pan in refrigerator. Keep remaining choc warm. 
*Blend peanut 
butter & butter together until smooth 
using electric mixer. Slowly beat in c
onfectioners' sugar & 
vanilla. Beat until smooth. 
Spread mixture over 
chilled chocolate layer. 
Pour remaining warm chocolate over top & spread 
s
moothly. 
Chill in refrigerator one hour. Yields 24-36 bars.

CHUNKY MONKEY BANANA PECAN COOKIES



IT'S WEEK THREE OF OUR "3 BUBBLY BAKERS CONQUER MRS. FIELDS" PROJECT! THIS WEEK'S CHOICE WAS A BANANA NUT COOKIE. ALTHOUGH DELICIOUS AS WRITTEN, IT WAS A LITTLE TOO SIMPLISTIC LOOKING FOR MY TASTE. THOSE OF YOU WHO READ MY BLOG REGULARLY KNOW I;M NOT HAPPY UNTIL I USE MY "WONKA" TOUCH. SO I ADDED A CHOCOLATE DRIZZLE AND A CHOCOLATE DIP WITH MORE PECANS & TURNED THEM INTO CHUNKY MONKEY BANANA PECAN COOKIES. THESE COOKIES PACK A PUNCH AND DO NOT DISAPPOINT!!! Banana Nut Cookies
2 2/3 cups flour, all-purpose
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup brown sugar, light packed
1/2 cup sugar
1 cup butter, softened
1 large egg
1 teaspoon liqueur or extract, banana flavor (I USED VANILLA)
3/4 cup ripe banana, mashed (1 BANANA)
2 cups semi-sweet chocolate chips
1 cup walnuts, chopped (I USED PECANS)

Directions
1 Preheat oven to 300°F
2 In a medium bowl, combine four, soda and salt. Mix well and set aside.
3 In a large bowl with an electric mixer, blend sugars at medium speed. Add butter and mix to form a grainy paste, scraping down the sides of the bowl. Add egg, liqueur and banana, and beat at medium speed until smooth. Add flour mixture, 1 cup of the chocolate chips (I ADDED ALL THE CHIPS) and walnuts, and blend at low speed until just combined.
4 Drop by rounded tablespoons onto ungreased cookie sheet, (I USED PARCHMENT PAPER) 2 inches apart.
5 Sprinkle cookies with chocolate chips, 6 to 8 per cookie.
6 Bake 20-24 minutes until cookie edges begin to brown.
7 Transfer immediately to a cool surface.

LACY OATMEAL COOKIES

IT'S WEEK 2 OF "3 BUBBLY BAKERS CONQUER MRS. FIELDS!!" KELLY CHOSE FOR US THE LACY OATMEAL COOKIES. A VERY THIN COOKIE SO I DIDN'T THINK I WOULD LOVE IT. (AS IF THAT WAS POSSIBLE).....86 COOKIES LATER I DECIDED THESE ARE VERY ADDICTIVE!!!! LOL VISIT Kelly's Tasty Treats AND Bite Me Bakery PAGES TO SEE THEIR PICTURES, TOO!!!! ♥ ♥ ♥
Lacy Oatmeal Cookies

1 cup quick oats
1/4 cup all-purpose flour
1/4 teaspoon salt
1 1/2 teaspoons baking powder
1 cup sugar
1/2 cup salted butter, softened
1 large egg
1 teaspoon vanilla

Directions
Preheat oven to 325 degrees. Line baking sheets with parchment paper or a silicone baking mat. (If you don’t have either of those, cover your baking sheet with foil and a coat of nonstick cooking spray.) In a medium bowl, combine oats, flour, salt, and baking powder. Mix well with a wire whisk and set aside.

In a large bowl, combine sugar and butter with an electric mixer at medium speed to form a grainy paste. Add egg and vanilla, and beat until smooth. Add flour mixture and blend just until combined. Drop dough by teaspoons onto your prepared baking sheets, with at least two inches between. Bake for 9-12 minutes or until edges begin to turn golden brown. Let cool, then peel off cookies carefully with your fingers.

Makes about 3-4 dozen.

JESSICA'S MARSHMALLOW CLOUDS

3 BUBBLY BAKERS CONQUER MRS. FIELDS, PROJECT WEEK 1
Jessica’s Marshmallow Clouds
3 cups all purpose flour, 1/2 teaspoon baking soda, 2/3 cup unsweetened cocoa powder, 1 cup soft butter, 1 cup granulated sugar, 1 cup packed brown sugar, 2 large eggs, 2 teaspoons vanilla extract, 2 cups mini semi-sweet chocolate chips, 8 oz mini marshmallows, frozen** (I DIDN'T NEED THEM ALL)
Preheat oven to 350 degree F. Line a couple of cookie sheets with parchment.
Mix flour, baking soda and cocoa powder together in a medium bowl. Set aside.
Cream butter and both sugars. Beat in eggs and vanilla. Add flour mixture to butter mixture and stir until blended. When ready to bake, mix in the chocolate chips.
Hold 4 or 5 frozen marshmallows in the palm of your hand. Scoop batter up by generously rounded tablespoonfuls and mold around marshmallows, covering marshmallows the best you can.
Place dough balls on cookie sheets, spacing about 2 ½ inches apart. Bake for 12 minutes. Cool on cookie sheets for about 5-10 minutes, then transfer to a wire rack to cool. They firm up a bit as they cool.
Makes about 3 ½ dozen

**Make sure you freeze the marshmallows before using, otherwise they will melt.

Here is a great surprise for all of you! Beginning tomorrow, 2 of my favorite, favorite Facebook baking buddies and I are starting a new weekly project called "3 BUBBLY BAKERS CONQUER MRS. FIELDS"... Using Mrs. Fields Best Cookie Book Ever, we will take turns choosing a recipe from this cookbook, baking it, and sharing the picture and recipe with all of you on Mondays! Everyone can always use a little Monday morning pick up! This book has 130 great recipes so each week will be something new and delicious for all tastebuds!! Our first great treat will be posted tomorrow!!
