SWEET POTATO CASSEROLE WITH PRALINE TOPPING-WOW!

WELCOME TO ANOTHER MONTH OF 2 SWEETIE PIES!!  I LOVE THIS DAY!  MY BLOGGING BUDDY LIZZY (FROM THAT SKINNY CHICK CAN BAKE) AND I EACH BAKE FROM THE OTHER'S BLOG AND SURPRISE EACH OTHER...AND YOU-WITH WHAT WE MADE!!! I LOVE THAT EVERY RECIPE I CHOOSE IS ALWAYS A WINNER AND THIS ONE WAS THE STAR OF THANKSGIVING DINNER!!! SWEET POTATO CASSEROLE WITH PRALINE TOPPING-OUTRAGEOUS!

Sweet Potato Casserole with Praline Topping
Ingredients

Adapted from LIizzy via Winners cookbook
 

3 cups mashed cooked sweet potatoes (about 3 large)   
1/2 cup sugar
1 teaspoon vanilla            
1/2 cup milk 

            
Topping:
1/3 cup flour (I used Cup4Cup brand for gluten free)
2/3 cup brown sugar
1/3 cup butter
1 cup chopped pecans

Instructions

Preheat oven to 350º.
Butter 2 quart baking dish. Set aside.
Combine sweet potatoes, sugar, vanilla and milk and mix well. Pour into baking dish and smooth top.
Mix the flour and brown sugar. Cut in butter until mixture looks like coarse crumbs.
Bake, uncovered, for 30 minutes.
Yield: 4-6 servings
Total time: 1 hour

SWEET POTATOES TOPPED WITH MINI MARSHMALLOWS




ROAST SWEET POTATOES ON A COOKIE SHEET IN THE OVEN AT 400 DEGREES FOR 45-60 MINS OR UNTIL THEY PIERCE VERY EASILY IN THE CENTER.  SLICE OPEN, ADD BUTTER AND A LIGHT SPRINKLE OF SALT.  TOP WITH LOTS OF MINI MARSHMALLOWS AND BROIL JUST UNTIL TOASTY ABOUT 2 MIN-KEEP AN EYE ON THEM!!!!

SWEET POTATOES REACH TO NEW LEVELS!




NOT THE BEST PHOTO-BECAUSE IN THE MIDST OF FAMILY FUN, OF COURSE I FORGOT TO TAKE A GOOD PICTURE....BUT THIS RECIPE IS A KEEPER!!! SWEET POTATO SOUFFLé WITH CARAMELIZED PECANS ON TOP!!!

2 POUNDS SWEET POTATOES
1/4 TSP. SALT
1/4C. BROWN SUGAR
2T. BUTTER
1/4C. HEAVY CREAM
3 YOLKS
3 WHITES
TOPPING:
HANDFUL OF PECANS-MORE OR LESS DEPENDING ON YOUR TASTE-CHOPPED FINE
2T. BROWN SUGAR
2T. MELTED BUTTER

PREHEAT OVEN 400. BOIL POTATOES UNTIL TENDER. DRAIN, PEEL AND MASH THEM. ADD SALT, SUGAR, BUTTER, CREAM AND YOLKS. BEAT THE 3 EGG WHITES UNTIL STIFF AND FOLD THEM IN. SPREAD IN A SOUFFLE DISH. FOR THE TOPPING, COMBINE THE MELTED BUTTER, PECANS AND SUGAR AND SPREAD ON TOP! BAKE 30-35 MINUTES!

SECRET RECIPE CLUB REVEAL-SWEET POTATO FRIES!!

FOR THE SECRET RECIPE CLUB THIS MONTH, I WAS ASSIGNED A BLOG CALLED, "WE HEART VEGAN." AS SOON AS I SAW HER POST FOR SWEET POTATO HOME FRIES I KNEW I'D FOUND MY MATCH! YEARS AGO, MY HUBBY & I HAD THE MOST AMAZING SWEET POTATO FRIES IN A RESTAURANT. THEY WERE ACTUALLY SERVED WITH....ARE YOU SITTING?.......POWDERED SUGAR!!!! AND THEY WERE PHENOMENAL. I FOLLOWED WE HEART VEGAN'S RECIPE CHANGING ONLY THE SHAPE OF MY POTATOES AND FINISHING THEM OFF WITH A SPRINKLING OF POWDERED SUGAR. MINE ROASTED FOR ABOUT 45 MINUTES. THANKS FOR THE INSPIRATION!!!

HERE THEY ARE...ALL DRESSED UP IN THEIR POWDERED SUGAR YUMMINESS!

WANT A FRY?

Sweet Potato Baked Home Fries -RECIPE FROM WE HEART VEGAN

Serves 4
2 large sweet potatoes
2 Tbsp. olive oil or canola oil
Dash of paprika
Ample sprinkle of sea salt and fresh ground black pepper
Directions:
Scrub the potatoes well; slice first into rings by cutting end to end then cut each circle into triangles by slicing it in half twice.
Place all the chunks into a mixing bowl and add the remaining ingredients; toss to coat.
Spread onto a baking sheet, being sure that they are in a single layer, and bake in a preheated 400 F oven for 8 minutes; flip after the 8 minutes and bake 8 more. Since the cubes are small they won’t take long at all.
Carefully remove each one and put in to a dish for serving; serve hot!
