"NACHO" REGULAR TACOS! NACHO TACO CASSEROLE!!!
Ingredients
Casserole:
2 tablespoons olive oil
1 pound sweet Italian sausage, out of the casing
3/4 pound ground beef
8 ounces crushed tomatoes or tomato sauce
1 bag blue corn tortilla chips (or chips of your choice)
1 1/2- 2 cups shredded cheese - I used a combo of mozzarella and provolone
Toppings: shredded, lettuce, sliced avocado, chopped tomatoes, sour cream, if desired
For the casserole: Preheat the oven to 375 degrees F.
Heat the oil, in a large, deep skillet over medium-high heat. Add the sausage and brown, crumbling the meat. Add the beef and continue to brown and crumble the meat. Add 8 ounces tomato sauce and mix all together. Let cool a bit.
Lay the bag of chips in a casserole dish and top with the sausage and beef mixture. Top with cheese. Bake at 375 degrees F until bubbly and hot about 20 minutes. Add toppings and serve!

TACO NIGHT...DECONSTRUCTED!
MOVE OVER TACO SHELLS.....BLUE CHIPS ARE TAKING OVER TACO NIGHT!!!! BLUE CHIP NIGHT DOESN'T SOUND AS FUN, SO LET'S STICK WITH TACO NIGHT! THESE ARE DECONSTRUCTED THOUGH....WAY MORE FUN TO EAT THIS WAY!!! THINK, SPICY MEAT, SHREDDED CHEESE, RED ONION, SCALLIONS, AVOCADO AND CHIPS!!! YUP!!!
SUPER EASY!!!!
COOK 1 OR 1 1/2 POUNDS GROUND BEEF IN A SKILLET BREAKING IT UP AS YOU GO! HERE YOU CAN SEE MY AWESOME PAMPERED CHEF TOOL TO DO THE BREAKING UP! (HOSTING A PARTY IN MARCH IF YOU WANT TO SNAG ONE LOL)
ONCE THE MEAT IS STARTING TO BROWN ADD:
28 OUNCE CAN CRUSHED TOMATOES.
SEASON WITH A NICE AMOUNT OF CHILLI POWDER TO TASTE, SALT AND PEPPER. LET SIMMER FOR 30-45 MINUTES ON LOW.
SERVE UP WITH:
AVOCADO
RED ONIONS, CHOPPED
SHREDDED CHEESE
SCALLIONS
AND LOTS OF CRUNCHY BLUE TORTILLA CHIPS!

TACO NIGHT!!
GOTTA LOVE TACO NIGHT!!!!
TACO MEAT:
HEAT 1-2 T. OLIVE OIL. ADD 1 1/2 POUNDS GROUND BEEF AND BREAK UP WITH A WOODEN SPOON. ONCE BROWN, ADD ONE 28-OUNCE CAN CRUSHED TOMATOES, ONE 15-OZ CAN TOMATO SAUCE AND 1/2C. CHICKEN BROTH. ADD FROZEN ROASTED CORN. SEASON WITH SALT, PEPPER AND CHILI POWDER. SIMMER UNCOVERED UNTIL REDUCED AND THICK. SERVE WITH BLUE CORN CHIPS, SCALLIONS, RAW ONION AND SHREDDED CHEESE, AND....TACO SHELLS!

SAUTE 1 ONION IN OLIVE OIL. ADD ONE PACKAGE OF GROUND BEEF AND BREAK UP WITH A WOODEN SPOON. ONCE BROWN, ADD ONE 28 OUNCE CAN CRUSHED TOMATOES AND 2C. CHICKEN BROTH. SEASON WITH SALT, PEPPER AND CHILI POWDER. SIMMER UNCOVERED UNTIL REDUCED AND THICK. SERVE IN SHELLS WITH TOPPINGS!
