CHOCOLATE DIPPED MARSHMALLOWS WITH CRUSHED CANDY CANES & CANDY CANE OREOS
Trader Joe's makes candy cane "oreos"...fabulous!
1. Insert a mini candy cane into your marshmallows.
2. Dip some marshmallows in melted chocolate disks and set on wax paper.
3. Sprinkle on crushed candy canes (I used crushed peppermint candies by Andes) and crushed candy cane cookie crumbs. Will set in just a few minutes.
Wrap up with some hot chocolate packets for the perfect Christmas gift!

PEPPERMINT PATTY STUFFED CHOCOLATE CHIP COOKIE BARS
MY FRIEND LIZZIE (FROM THAT SKINNY CHICK CAN BAKE) AND I ARE STARTING A NEW FEATURE. WE ARE CALLING OURSELVES.....

EACH MONTH WE WILL POST A SURPRISE RECIPE FROM EACH OTHER'S BLOG. THIS IS OUR SECOND MONTH AT THIS FUN VENTURE AND I CHOSE THESE PEPPERMINT PATTY STUFFED CHOCOLATE CHIP COOKIE BARS. YOU DON'T EVEN HAVE TO ASK HOW THEY WERE... WHENEVER I BAKE FROM LIZZIE'S BLOG, THE RESULTS ARE ALWAYSSSS THE SAME......FABULOUS, DELICIOUS AND BEYOND WONDERFUL! THESE BARS STOOD TRUE TO THAT!!! Peppermint Stuffed Chocolate Chip Bars…adapted from LIZZY!!!
3/4 cup butter, at room temperature
1/2 cup sugar
1/2 cup brown sugar
2 eggs
1 1/2 teaspoons vanilla
3 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 1/4 cups mini-chocolate chips
11 ounce bag York Peppermint Patties
Preheat oven to 350ยบ. Line a 9 x 9 inch pan with non-stick foil.
Cream butter
and sugars till light and fluffy. Add eggs and vanilla till
combined. Stir in baking soda and salt. Add flour and mix till
combined. Fold in chocolate chips.
Press half of
cookie dough in prepared pan. Top with unwrapped peppermint patties.
Cover with the remaining cookie dough and spread with offset spatula carefully to
make top even and level.
Bake 34-38 minutes, till golden. Cool in pan, then place in refrigerator to chill for cleaner cutting.
Makes 16-25 depending on size.

TRIPLE DECKER CANDY CANE OREOS DIPPED IN CHOCOLATE
DARK CHOCOLATE CHIPS
CRUSHED PEPPERMINT CANDIES
MELT CHOCOLATE AND USE IT TO ADHERE 3 COOKIES TOGETHER BY DABBING SOME IN BETWEEN EACH. CHILL UNTIL SET. DIP ENTIRE 3 STACKED CREATION INTO CHOCOLATE. LAY ON WAX PAPER TO SET AND SPRINKLE ON CANDIES.

PEPPERMINT LOVER'S CREAM PUFFS!
In a pot bring the following to a boil:
1 stick butter
1 cup water
Add: 1 tsp vanilla
1c flour
Stir constantly until it leaves the side of the pot and forms a ball. Remove and cool. Beat in 4 eggs, one at a time until smooth. Drop by T. onto parchment lined cookie sheets and bake at 400 degrees for about 45 minutes. Let cool. Slice in half. Makes 8-12 depending on size.
Whipped Cream:
Beat 2c. heavy cream with 3 Tablespoons confectioners sugar to almost stiff peaks. Fill cream puffs and add chopped Andes peppermint candies, Ghirardelli peppermint squares and chocolate sauce! Mmmmmmm!!!!!!

CHOCOLATE COOKIES STUFFED WITH PEPPERMINT PATTIES
PEPPERMINT PATTY COOKIES
RECIPE
2 and ¾ sticks unsalted butter, SOFT
¾ cup granulated sugar
¾ cup packed light brown sugar
2 large eggs
2 TB half & half (or cream)
1 ½ ts pure vanilla extract
3 cups all purpose flour
½ cup + 2 TB cocoa powder (not dutch process)
¾ tsp sea salt
1 and ½ tsp baking powder
½ ts baking soda
2 cups dark & milk chocolate chips
10 candy mint patties (like York peppermint patties)
In a mixing bowl, using an electric mixer, or by hand beat butter and both sugars just until creamy. Don’t overbeat. Add in the eggs, vanilla, and half & half and beat just until incorporated.
In another bowl mix the flour, cocoa powder, baking soda, baking powder and salt.
When thoroughly mixed, add to batter and stir just until blended. Stir in chocolate chips. Chill dough at least an hour before baking.
Divide dough into 10 – 12 lemon size balls. Don’t shape as a lemon though, just shape as a nice round ball. SpIit ball in half, insert a peppermint patty, cover with other half and seal all edges. Place on a parchment lined baking sheet—keeping them 3-4 inches apart. Now back into the fridge to chill.
Preheat oven to 375 degrees. Depending on your oven, these should need anywhere from 12- 15 minutes to BAKE.
