ROLO CARAMEL PRETZEL CANDIES



Line a cookie sheet with nonstick foil. Lay pretzels on sheet and top each with 1 rolo. PLace in a 250 degree oven for 3-4 minutes until rolos are soft. Remove and press a pretzel m & m into each!  Or a pecan, or a candy you like!  Add sprinkles and cool.

COOKIE BUTTER ROLO BARS!!!!!!!

 

JADEN IS HARD AT WORK UNWRAPPING ROLOS!!!





 Biscoff, Speculoos, Cookie Butter.....no matter what you call it....they're all delish!  I used the Whole Foods version for this recipe as it is a bit healthier than the others.  Equally scrumptious results!  I mean, it has rolos and cookie butter...how bad can it be????

Ingredients
  • 1 cup butter
  • ¾ cup brown sugar
  • ¾ cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup Biscoff Spread or Speculoos or Cookie Butter
  • 1 ¾ cup flour
  • ¾ teaspoon baking powder
  • 1 12oz package Rolo Candy

Instructions
  1. Preheat oven to 350. Line a 9×13 pan with nonstick foil.
  2. In a mixer, cream butter and both sugars. Add eggs.  Add vanilla and Biscoff/Speculoos spread.  Add flour and baking powder.  Stir in half of the Rolos. Spread batter into prepared pan. Chop remaining Rolos and press onto the top.
  3. Bake for approx 35 minutes until lightly golden.  Let cool completely before cutting.

ROLO BROWNIES WITH FUDGE TOPPING


STEP ONE: Make Brownies
4 eggs
1 1/4 cups unsweetened cocoa powder
1 teaspoon salt
1 teaspoon baking powder
1 Tablespoon vanilla extract
1 cup (2 sticks) butter
2 1/4 cups sugar 
1 1/2 cups all purpose flour

Directions:


Preheat oven to 350 and line 9"x13" pan with nonstick foil. In a large bowl, add 4 eggs, and beat with cocoa, salt, baking powder, and vanilla. Stir until fully combined and smooth.In the microwave, melt butter. When melted, add sugar, and stir to combine.Add warm butter/sugar mixture to the egg/cocoa mixture, stirring until smooth. Add the flour and stir until fully incorporated. Spread batter into prepared pan, and smooth as needed.Bake brownies about 30 minutes. Test for doneness by inserting a toothpick.  You should find moist crumbs. 

 STEP 2-Pour on a 1/2 cup caramel sauce.  Use jarred or Homemade! (Or what I did was to microwave  1 bag Kraft caramel bits with 2T. heavy cream until smooth)

Step 3-Cut 2 cups unwrapped Rolo candies in half and lay on top of the caramel.  

Step 4-Make Fudge Topping

1 (14 oz) can sweetened condensed milk
3 cups semi sweet chocolate chips
In a microwave safe bowl,  melt sweetened condensed milk and chocolate chips together gently.  Stir and immediately spread over Rolos with an off-set spatula. Chill a few hours before cutting.  Can microwave each brownie bar before serving to melt the caramel! Sprinkle with sea salt, if desired!

ROLO PECAN PRETZEL BITES-A MUST FOR YOUR CHRISTMAS PLATTERS!!





  
SO SIMPLE, SO DELICIOUS!

 ALL YOU NEED:
PRETZELS
UNWRAPPED ROLO CANDIES
PECAN HALVES
SEA SALT

PREHEAT OVEN TO 300 DEGREES.  LINE A PAN WITH NONSTICK FOIL.  LAY OUT YOUR PRETZELS AND TOP EACH WITH ONE UNWRAPPED ROLO CANDY.  LAY PECANS ON THE PAN TOO BUT NOT ON TOP OF THE ROLO.  PLACE IN OVERN 4 MINS. REMOVE AND PUSH EACH PECAN GENTLY ON TOP OF THE ROLO CANDIES. SPRINKLE WITH SEA SALT!

DOUBLE CHOCOLATE ROLO BROWNIE COOKIES WITH SEA SALT



Ingredients

16 oz semi sweet chocolate chips
4 Tablespoons butter
4 eggs
1 1/3 cups granulated sugar
2 tsp vanilla extract
1/2 cup flour
1/2 tsp baking powder
1 1/2 cups chopped Rolo candies, approx 30-35 pieces
flaked sea salt for sprinkling


Preheat oven to 350° and line baking sheets with parchment paper.  Microwave the chocolate chips and butter together until melted.  Add eggs, sugar and vanilla, whisking until combined.  Add flour and baking powder.  


Fold in the chopped Rolo candies.
Drop by heaping tablespoons on prepared baking sheet.
Bake 10-12 minutes until centers are just set.
When cookies are done immediately sprinkle with sea salt.  Cool on baking sheet.

CHOCOLATE GLAZED SALTED CARAMEL COCONUT COOKIES


Preheat oven 350 degrees F.

Step 1-Make Caramel
  • 1/2 cup sugar
  • 3 tablespoons water
  • 2 tablespoons butter
  • 3/4 cup heavy cream
  • Add sugar and water into a saucepan over low heat. Stir until sugar has dissolved. Once sugar has dissolved increase heat to high. Swirl pan to keep the mixture moving.  The mixture will start to bubble after a minute. As the mixture darkens to a medium amber color, approximately 5-7 minutes add butter and  cream to saucepan. The mixture will bubble wildly. Set aside.
Cookie
  • 1 1/2 oz. sweetened coconut, about 1/2 cup
  • 2 1/4 cup unbleached all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup caramel, warm not hot
  • 1 egg
  • 1/2 cup granulated sugar
  • 1/2 dark brown sugar, packed
  • 1 tablespoon corn syrup
  • 1 teaspoon vanilla extract
  • 2 1.7 oz Rolo candy packs
  • To make cookie
  • Spread coconut into a thin layer on a bake sheet and bake for 5-7 minutes, turning as it bakes until golden.  Cool.
  • Put toasted coconut and flour in a food processor until finely ground. Add in baking soda and salt.
  • In a mixer, combine caramel and sugars until well combined.  Add egg, corn syrup and vanilla. Add flour mixture on low.
  • Make scoops of dough and place a rolo inside of each.  Roll into a ball and bake on parchment for approx 10 mins.  Cool.
Chocolate glaze
  • 2/3 cups dark chocolate
  • 1 tablespoons heavy cream
  • 5 tablespoons powdered sugar, sifted
  • 4-5 tablespoons water, warm
  1. Place chocolate and cream in microwave until melted.  Add sugar and water.  Dip cookies in chocolate and top with coconut and rolos!

ROLO STUFFED CHOCOLATE CHIP COOKIES







NEED A FAST TREAT? GRAB SOME PILLSBURY CHOCOLATE CHIP COOKIE DOUGH, A BAG OF ROLOS AND LET'S GET STARTED!  WRAP EACH COOKIE AROUND ONE ROLO CANDY.  LAY ON PARCHMENT AND BAKE AT 350 12-15 MINUTES.  LET COOL AND ENJOY!

PEANUT BUTTER ROLO COOKIES WITH SEA SALT

WANT ONE?
THIS RECIPE WORKS GREAT WITH MINI PEANUT BUTTER CUPS, TOO! TIP: FREEZE THEM PRIOR TO BAKING THEM!
PEANUT BUTTER, CARAMEL, SEA SALT......I CAN'T THINK OF A MORE PERFECT COMBO!!! I BAKED THESE COOKIES IN A MUFFIN TOP PAN BUT OF COURSE, THEY TASTE JUST AS GREAT ON A COOKIE SHEET!!!!!!!
  • 3/4 cup softened butter
  • 1 cup sugar
  • 1 cup light brown sugar
  • 1 cup SKIPPY peanut butter
  • 2 eggs
  • 2 tsp vanilla
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 1/2 cups flour
  • 1 1/2 cup milk chocolate chips
  • 1 bag of mini rolos
  1. Beat butter, sugars, peanut butter. Add eggs and vanilla. Beat in dry ingredients. Stir in chocolate chips.
  2. Scoop dough into a muffin tin pan (grease if not non-stick) and press a few rolos into each-about 4. Sprinkle with coarse sea salt. Bake 12-15 minutes at 350. Or place dough on parchment lined cookie sheet and do the same.
  3. Cool on baking sheet and remove to rack

CARMELITA BARS STUFFED WITH ROLOS!!!


CARMELITA BARS ARE SCRUMPTIOUS BUT ADD A LAYER OF ROLO CANDIES AND IT PUSHES THEM OVER THE TOP!
RECIPE:

2 cups old-fashioned rolled oats
2 cups flour
1 cup packed light brown sugar
3/4 teaspoon baking soda
1 teaspoon salt
2 1/2 sticks soft butter
1 cup semisweet chocolate chips
15 Kraft caramels (cut in half) plus 1T. half & half
1 package mini Rolos

Preheat oven to 350 degrees. Line a 9-by-13- inch pan with nonstick foil.

Stir together oats, flour, brown sugar, baking soda, and the salt in a large bowl. With mixer on low, add butter until starts to come together. Press half of mixture onto bottom of lined pan.

Bake until just set and starting to color around edges, about 20 minutes. Let cool in pan on a wire rack 5 minutes. Meanwhile, microwave slowly the caramels and cream -stirring until smooth.

Sprinkle crust with chocolate chips &mini Rolos. Drizzle on the caramel.

Top with remaining crumb mixture, lightly pressing.

Bake about 20 to 25 minutes. Let cool completely in pan before cutting into squares.

ARE YOU WEARING YOUR ELASTIC WAISTED PANTS? IF NOT, YOU MAY WANT TO GO CHANGE. THIS TRIFLE IS NOTHING SHORT OF INSANE. BROWNIES, SALTED CARAMEL, ROLOS AND CHOCOLATE WHIPPED CREAM.....YUP, IT'S FOR REAL!

STEP ONE-BAKE BROWNIES OF YOUR CHOICE. I USED ALMOST 2 9X13 PANS. CHILL, CUT INTO CUBES. HERE IS MY FAVORITE BROWNIE RECIPE! YOU CAN USE GLUTEN FREE BROWNIES, TOO!!

STEP TWO-MAKE THIS CARAMEL.....CLICK HERE!

STEP THREE-MAKE CHOCOLATE WHIPPED CREAM
FOR THE WHIPPED CREAM

4 cups heavy cream
6 tablespoons sugar
2 tablespoons cocoa powder
2 teaspoons vanilla extract

BEAT ALL UNTIL FIRM PEAKS FORM

STEP 4-CHOP UP SOME ROLO CANDIES

TO ASSEMBLE: LAYER IN TRIFLE BOWL: CREAM, BROWNIES, CARAMEL, ROLOS AND REPEAT OVER AND OVER AGAIN UNTIL YOU REACH THE TOP.

ROLO CHEESECAKE BARS....INSANELY DELISH!!!!!!!!!!!

 


HERE ARE A BUNCH OF BARS ON MY TRAY....READY TO TRAVEL! HERE IS THE CHEESECAKE BATTER MEETING THE ROLOS! HOT OUT OF THE OVEN -READY TO COOL! POURING ON THE CHOCOLATE GLAZE!!!!!!



CRUST:
3 cups of graham cracker crumbs
1 cup sugar
2 STICKS MELTED BUTTER (16 TABLESPOONS)


STIR ALL TOGETHER AND PRESS INTO A 9X13 PAN LINED WITH NONSTICK FOIL.
BAKE AT 350 FOR 7-10 MINUTES AND COOL.


FILLING:
BEAT: 2 8-OUNCE PACKAGES OF CREAM CHEESE
2 EGGS
1C. SUGAR
1/4C. FLOUR
ONCE SMOOTH, ADD ONE PACKAGE OF MINI ROLOS (THE UNWRAPPED ONES)

POUR ONTO THE COOL CRUST AND BAKE AT 350 FOR 30-35 MINUTES.

LET COOL AND ADD GLAZE.

GLAZE:
MELT IN THE MICROWAVE:
1 STICK BUTTER & 6 OUNCES CHOCOLATE CHIPS.
STIR SMOOTH AND ADD 4 TSP. LIGHT CORN SYRUP.
POUR SMOOTHLY ON BARS AND CHILL OVERNIGHT.
CUT WITH A BIG KNIFE! I ADDED A CHOCOLATE DRIZZLE AND A HALF A ROLO ON TOP!

CHOCOLATE CARAMEL ROLO CREAM CHEESE BANANA BREAD

HERE ARE TODAY'S SUPER STARS!



ROLOS + BANANA BREAD=
CHOCOLATE CARAMEL CREAM CHEESE BANANA BREAD! MMMMMM!!!!


BEAT IN MIXER:
12 TABLESPOONS BUTTER AND 4 OUNCES SOFT CREAM CHEESE.

ADD:
1C. SUGAR, 1/4 TSP. VANILLA AND 1 EGG,

ADD:
1 1/2C. FLOUR
1/4 TSP. SALT
1/4 TSP. BAKING SODA
1/4 TSP. BAKING POWDER
AND BLEND ON LOW.

STIR IN BY HAND:
3/4C. MASHED BANANAS (ABOUT 2)
1 BAG OF ROLO MINIS (CAN MIX WITH 1 T. FLOUR IF NERVOUS THEY WILL SINK)

POUR INTO A WELL GREASED 9X5 LOAF PAN AND BAKE 60-70 MINS AT 350. I COVERED MINE WITH FOIL THE LAST 10 MINS TO PREVENT OVERBROWNING. COOL ON A RACK AND REMOVE FROM PAN.
