FANCY 3 CHEESE MACARONI WITH CARAMELIZED ONIONS & BACON!!!
4 cups of partially cooked macaroni (don't cook all the way) (I used gluten free pasta-worked like a charm)
8 Tablespoons salted Butter
2 whole Medium Onions, Cut In Half And Sliced Thin
1/4 cup cornstarch
2 cups Whole Milk
1/2 cup Half-and-half
2 whole Egg Yolks, Beaten
Salt And Pepper, to taste
1/2 cup Grated Gruyere Cheese
1/2 cup Grated Fontina Cheese
1/2 cup Pecorino Romano Cheese
3 slices bacon, cooked crisp and crumbled for garnish
1 chopped scallion, garnish
Preparation Instructions
Preheat oven to 350 degrees.
Melt 4 tablespoons butter in a skillet and then saute onions over medium-low heat for 10 to 12 minutes, or until golden brown and soft. Set aside.
In a pot, melt 4 tablespoons butter. Sprinkle in corn starch and whisk to combine. Cook, stirring constantly, over medium heat for 1 minute. Pour in milk and half & half, then cook for 3 to 5 minutes or until thick. Reduce heat to low. Add generous salt & pepper to taste.
Beat egg yolks and drizzle 1/4 cup hot mixture into the yolks, stirring constantly. Stir to combine. Pour egg mixture into sauce and cook for another minute.
Add cheeses and stir until melted. Add onions and stir. Taste for seasonings and add more salt if needed. Add cooked macaroni and stir to coat.
Pour into a baking dish and bake for 15 to 20 minutes or until sizzling and hot. Sprinkle with bacon and scallions.

CHEESY PASTA SKILLET BAKE
Ingredients
- 24 ounces Pasta sauce
- 1 lb dried pasta (I used Tinkyada, gluten free)
- 3 cups water
- 1 (8-oz) package shredded Italian cheese blend
- scallions, for garnish
Directions
- In a large (12-inch) skillet combine sauce, dried pasta, and water. Stir to combine, cover and bring to a boil. Boil until pasta is cooked.
- Preheat oven to broil. Top skillet with shredded cheese and place in oven. Broil until cheese is bubbly and golden brown.
- Top with scallions.

2 28-OUNCE CANS WHOLE TOMATOES, PUREE, CRUSHED OR A COMBO OF THESE!
1 STICK BUTTER
1 LARGE ONION PEELED AND HALVED
PLACE ALL IN A LARGE POT AND BRING UP TO A SIMMER. COOK COVERED 45-60 MINS BEING SURE TO BREAK UP THE LARGE TOMATOES IF USING THEM. I ADDED SALT, TOO!!!! DISCARD ONION WHEN DONE COOKING. SERVE WITH A SPRINKLING OF MOZZARELLA CHEESE.

BEST ALLA VODKA MINUS THE VODKA! LOL
FEEL FREE TO ADD VODKA IF YOU WANT, BUT TRULY DELISH AS WRITTEN!!! HUBBY NAMED IT A "10"...HEE HEE!!! THIS VERSION (IN BLACK) USED SAUSAGE. BELOW (IN RED) IS THE ORIGINAL VERSION I USUALLY USE WITHOUT SAUSAGE. BOTH GREAT!!
SAUTEE ONE PACK OF SAUSAGE, CUT INTO BITE SIZE PIECES IN SOME OLIVE OIL TO BROWN. ADD 1 CHOPPED ONION AND 6 MINCED GARLIC CLOVES.
ADD: 2 CANS CRUSHED TOMATOES, 1 CUP HEAVY CREAM, 1 CUP PARMESAN CHEESE, SALT AND PEPPER. COOK PARTIALLY COVERED 45 MINS ON A LOW SIMMER.
ORIGINAL VERSION:
MELT 1 STICK BUTTER, ADD 1 CHOPPED ONION AND 6 CLOVES GARLIC.
ADD 1 CAN CRUSHED TOMATOES (28 OUNCES), 1 C. HEAVY CREAM, 1/2 C. PARMESAN CHEESE, SALT/PEPPER. COOK 45 MINS ON A LOW SIMMER PARTIALLY COVERED.

PERFECT FETTUCCINE PIE!
WHEN MY 2 YEAR OLD SAW THE CAKE-LIKE PRESENTATION OF THIS DISH, HE BROKE OUT SINGING HAPPY BIRTHDAY! LOL!!! THIS DINNER IS PRETTY AWESOME. I USED HOMEMADE GF FETTUCCINE (CLICK HERE FOR RECIPE) BUT BOXED PASTA IS A PERFECT MATCH, AS WELL!1 POUND PASTA-(I HAVE MADE IT WITH REGULAR AND ALSO GF)
6 EGGS
1 POUND MOZZARELLA CHEESE, SHREDDED
1C. GRATED PARMESAN CHEESE
1/4C. HEAVY CREAM
1 BUNCH SCALLIONS, CHOPPED
PREHEAT OVEN 375. COOK FETTUCCINE OR SPAGHETTI AND DRAIN/RINSE. BUTTER A 10X3 ROUND CAKE PAN, LINE WITH PARCHMENT AND BUTTER THE PAPER. I USED A SLIGHTLY SMALLER DISH, ABOUT A 9 INCH CORNINGWARE.
IN A BOWL, MIX EGGS, CHEESES, HEAVY CREAM, HALF THE SCALLIONS, SALT AND PEPPER TO TASTE. ADD SPAGHETTI AND LIGHTLY STIR TO COMBINE. POUR INTO DISH. COVER WITH FOIL AND BAKE 40 MINS. REMOVE FOIL AND BAKE 20 MORE MINUTES TILL LIGHTLY BROWNED. COOL 10 MINUTES. RUN KNIFE AROUND THE SIDE TO UNMOLD AND INVERT ON A PLATE. CUT BIG WEDGES! TOP WITH EXTRA SCALLIONS!
